One of my favourite vegetarian dishes, and one that is also simple to prepare and cook.
Beetroot Orzotto with Halloumi Croutons

Ingredients
300g Cooked Beetroot
200g orzo pasta
500ml vegetable stock
1 red onion (chopped)
150g mushrooms (chopped)
1 teaspoon allspice
1 teaspoon paprika
1 teaspoon dill
1 teaspoon galic powder
225g Halloumi
1 teaspoon vegetable oil
Directions
- Pat the beetroot dry and cut into small cubes.
- Prepare the 500ml vegetable stock
- Heat a small amount of oil in a pan on a medium-high heat and add the chopped red onion and mushrooms and cook for 3 minutes
- Add the orzo pasta and cook for 1 minute
- Add in the beetroot and spices (I use a spice mix, but the allpsice, paprika, dill and garlic powder should be similar in taste)
- Add the vegetable stock, stir and then add the pan lid with the spatula/wooden spoon still in the pan so that there is space for steam to escape
- Allow to bubble away until most of the liquid is drained, this will be around 15 minutes
- While the orzotto is bubbling, fry up some oil in a frying pan and cut the halloumi into large cubes. Add to pan and turn regually until browned on all sides, turn off heat.
- Serve the beetroot orzotto and sprinkle the halloumi on top.
