Salpicao Salad is a Brazilian chicken and apple salad with fries on top. It is great served as a side for Brazilian Coxinhas.
I highly recommend preparing the chicken as per the Coxinha recipe, but pre-cooked chicken can be purchased and used as well.

2 large potatoes (approx 350g)
825g prepared chicken (thighs or whole chicken, skin and bone removed)
1 granny smith apple
1 gala apple
80g Raisins (optional)
1 tablespoon lime juice
3 tablespoons mayonnaise
1 tablespoon soured cream
Directions
- Preparations
- Peel and cut the potatoes into long thin fries. Soak in cold water for 30 minutes.
- Prepare the chicken according to the Coxinha recipe, or remove the skin and bone from cooked chicken.
- Salpicao Salad
- Julienne the red and green apples (cut into tiny strips), add to a bowl.
- Tear the chicken into strips, add to the apples (and raisins if using).
- Add the lime, mayo and sour cream and mix well.
- Store this mix in the fridge if needed.
- Once the potatoes are ready, drain and pat dry. Heat oil to 180°C (if making the Coxinhas, they can go in after those) and fry until they are crisp and golden
- Dry the chips with kitchen towel.
- Add the apple/chicken mix onto the plate and scatter the fries on top to serve.
